Dark Chocolate Energy Balls

Here’s What You’ll Need:

  • 2 cups almonds

  • 1/2 heaping cup of shredded coconut

  • 1/3 cup flaxseed meal

  • 2/3 cup peanut butter (i use a natural creamy PB)

  • 1/3 cup pure maple syrup

  • 1 tsp vanilla

  • 1/2 or more of dark chocolate chips

  • salt

Instructions:

  1. Add almonds into a blender or food processor and pulse until you get smaller almond pieces and some finely chopped almonds

  2. Add coconut and flaxseed and pulse some more

  3. Add almond mixture to a bowl then add PB, syrup, vanilla, chocolate chips, and salt

  4. Mix to combine all

  5. Form 1 TBSP balls (it will be super sticky and thats okay)

  6. Place balls on parchment then place in fridge for an hour

Enjoy! I store the balls in the fridge.
