Dark Chocolate Energy Balls
Here’s What You’ll Need:
2 cups almonds
1/2 heaping cup of shredded coconut
1/3 cup flaxseed meal
2/3 cup peanut butter (i use a natural creamy PB)
1/3 cup pure maple syrup
1 tsp vanilla
1/2 or more of dark chocolate chips
salt
Instructions:
Add almonds into a blender or food processor and pulse until you get smaller almond pieces and some finely chopped almonds
Add coconut and flaxseed and pulse some more
Add almond mixture to a bowl then add PB, syrup, vanilla, chocolate chips, and salt
Mix to combine all
Form 1 TBSP balls (it will be super sticky and thats okay)
Place balls on parchment then place in fridge for an hour
Enjoy! I store the balls in the fridge.
