Caramelized Onion Mashed Potatoes

Here’s What You’ll Need:

  • 5 lb bag of gold potatoes, chopped in cubes

  • 3-4 large onions, sliced thin (depends on how onion-y you want them)

  • 1.5-2 cups gruyere cheese (I use the trader joes gruyere-swiss one)

  • 5 tbsp salted butter + 3 tbsp

Ingredients:

  1. In a large pan, melt 3 tbsp of salted butter, then add all sliced onions.

  2. Turn heat about medium high, cover, and let onions cook for about 5-7 minutes, stirring every few. You want to start to see a tiny bit of browning before fully taking the lid off for good.

  3. Turn heat on low and remove lid. Cook onions for another 30 minutes, stirring every so often. You want that deep golden color. It could take longer depending on your heat setting. Low and slow my friends!

  4. In a large pot, add potatoes and fill with cold water to just right above. Bring to a boil and keep boiling for 10-15 minutes, testing with a fork to see if it easily goes through potatoes.

  5. When finished, drain potatoes, throw 5 tbsp of butter in pot, then mash them.

  6. Add in cheese and caramelized onions.

I love serving this with my Red Wine Pot Roast. Add as much cheese or onions as you feel!
