Cheddar Sausage Muffins

Here’s What You’ll Need:

  • 1 cup protein pancake mix (I use Kodiak)

  • 1 cup whole milk or milk of choice

  • 2 eggs 

  • 2 tbsp melted butter

  • 1lb ground Jimmy Deans breakfast sausage cooked and grease drained

  • 1 heaping cup shredded cheddar cheese + extra for the top

  • 4 tbsp maple syrup 

Instructions:

  1. Preheat oven to 350°F and grease muffin pan

  2. Combine all ingredients besides maple syrup

  3. Pour into 12 muffin cups in the pan

  4. Drizzle maple syrup on top of each one and add a small topping of cheddar

  5. Bake for 26-28 minutes until a toothpick comes out clean in the center

You can definitely add bacon or different sausage instead!
