Crockpot Chipotle Chicken

Cilantro Lime Crema

  • 1/2 cup greek yogurt

  • small handful of cilantro

  • squeeze of a lime

  • salt & pepper

Blend all together

Here’s What You’ll Need:

  • 1 cup pulp free OJ

  • 7oz can of chipotle peppers in adobo

  • 4 tbsp coconut aminos or low sodium soy sauce

  • 2 tbsp apple cider vinegar

  • 1 tbsp garlic powder

  • 2 tsp cumin

  • 1 tsp onion powder

  • 4.5 tbsp honey

  • 1 tbsp olive oil

  • 1 tiny bunch of cilantro leaves

  • salt & pepper

  • 1.5lbs chicken breasts

Instructions:

  1. Combine all ingredients besides chicken in a blender and blend for about 30 seconds

  2. Add whole chicken breasts to crockpot

  3. Pour sauce over chicken

  4. Turn crockpot to high for about 4 hours

  5. Take chicken out & chop or shred

  6. Ladle as much or as little of the crockpot sauce on top

I always make a side of sautéed onions and peppers and a put it together in a tortilla or serve the tortilla shredded on the side.
