Reset Chicken Noodle Soup

Here’s What You’ll Need:

  • 1-2 tablespoons olive oil

  • one large onion diced

  • 2 cups carrots sliced

  • one cup celery diced

  • 2 tablespoons fresh ginger, chopped finely

  • 6 garlic cloves minced

  • 5 cups chicken bone broth

  • 2 cups water

  • 1 teaspoon salt

  • 2 bay leaves

  • 1/4 teaspoon + another dash of white pepper (this makes it!)

  • 3-4 chicken breasts cut in half

  • 1/4 cup lemon juice to taste

  • Spinach

  • Noodles like ditalini or egg noodles

Instructions:

  1. Heat oil in a big pot

  2. Add veggies, garlic and ginger and saute 8-10 minutes

  3. Add the chicken bone broth, water, salt, white pepper, bay leaves and chicken.

  4. Bring to a boil. Cover, and lower heat for 20 minutes

  5. Take the chicken out, shred it, then return it to the pot

  6. Add in half of the lemon juice, taste and adjust broth by adding more salt, water, or lemon juice (i love mine extra lemony)

  7. Cook noodles according to box then drain and add in soup
