Greek Chicken & Veggies

Here’s What You’ll Need:

For Chicken marinade:

– 2 tbsp olive oil

– juice from 1 1/2 lemons

– 1/4 cup greek yogurt

– 2 tsp garlic powder

– 1 tbsp paprika

– 1 tbsp dried oregano

– salt and pepper

– 1 pound chicken breasts

Feta Sauce:

– 6oz crumbled feta

– 1/2 cup greek yogurt

– juice of 1 lemon

– 1/2 tsp paprika

– pinch of dill

Optional add-ons:

– zucchini

– red bell pepper

– artichoke hearts

– pitas to hold it all in

– sweet potato fries (we love our TJ ones!)

Instructions:

  1. Put all ingredients for the marinade in a bag including the chicken and massage. Stick in fridge for at least 30 minutes or the whole day.

  2. Preheat oven to 425 degrees.

  3. Chop any veggies you want, drizzle with olive oil, salt, pepper, and oregano.

  4. Roast veggies in oven for about 20 minutes.

  5. Take chicken out of fridge and put in air fryer at 390 degrees for about 14 minutes or until cooked to 165 degrees internal temp, flipping half way. Also grilling the chicken tastes just as good!

  6. Combine all ingredients for feta sauce and add to blender.

  7. Roast sweet potato fries in oven according to their directions.

  8. Slice cooked chicken and add inside pita with fries & feta sauce!

  9. Also optional to serve without pita and have roasted veggies on the side.

Toddler option: serve chicken cut up with a dollop of greek yogurt, a pita, and some sweet potato fries.
