Pot Roast Soup

Here’s What You’ll Need:

  • 16 oz bottle of catalina or homemade catalina

  • 1-2 lbs boneless beef chuck roast or pot roast meat

  • 2 large onions, sliced thin

  • 2 lbs yukon gold potatoes, cut into 1 inch cubes

  • 1 lb carrots, cut into slices

  • salt & pepper

Instructions:

  1. Brown meat in a large pot with 1/4 cup of the dressing, add salt & pepper

  2. Add onions and cook for 5-10 minutes until soft

  3. Add potatoes, carrots, and the rest of the dressing

  4. Add water leaving about 1/2 inch of ingredients uncovered

  5. Bring to a boil, cover, then simmer low for 2 hours

  6. Add additional salt & pepper to taste
