Sheet Pan Greek Chicken
Feta Sauce:
6oz crumbled feta
1/2 cup greek yogurt
juice of 1 lemon
1/2 tsp paprika
pinch of dill
Add all ingredients to blender and blend until smooth
Here’s What You’ll Need:
1 lb chicken breast, cut into cubes
1 pound of thinly sliced steak (Trader Joes has this or just slice a steak thin)
1 lb baby dutch yellow potatoes, cubed
1 jar of artichoke hearts
2 bell peppers, largely chopped
1 zucchini, halved & sliced
1 red onions, largely chopped
1/4 cup olive oil
1 lemon, juiced
1 tbsp dried parsley
1 tbsp of garlic powder
1/2 tsp of oregano
2 tsp of smoked paprika
1 tsp onion powder
Salt & Pepper
2 tbsp red wine vinegar
Instructions:
Set oven to 425 degrees F
Add chicken, veggies, and potatoes on a big sheet pan
Combine lemon, vinegar, olive oil and seasonings in a jar
Toss the chicken, veggies, and potatoes in the marinade until well coated
Bake for 35 minutes or until chicken is at 165 degrees F
Add to bowl and top with feta sauce!!
