Pumpkin Mini Muffins

Here’s What You’ll Need:

  • ¼ cup whole milk greek yogurt

  • ¼ cup salted butter melted

  • 1/3 cup pure maple syrup

  • 1 cup pumpkin puree (I use 100% organic)

  • 1 egg

  • 1 teaspoon vanilla

  • 1 cup flour

  • 2 teaspoons pumpkin pie spice (use more if you want!)

  • 1 teaspoon baking powder

  • ½ teaspoon baking soda

Instructions:

  1. Preheat oven to 375 degrees

  2. Mix all ingredients in a bowl

  3. Pour into greased mini muffin tin OR no need to grease with a silicone muffin tin

  4. Bake for 12 minutes

  5. Let rest for 10 minutes before serving

Top with a little cream cheese! Our little ones love them!!
