Turkey Enchiladas

Here’s What You’ll Need:

  • 1 onion, sliced thin

  • 1 poblano pepper, sliced thin

  • 10 oz ground turkey

  • 1 tsp chipotle powder

  • 1 oz cream cheese

  • 6 medium size tortillas

  • 2 tbsp cilantro, chopped

  • 2 garlic cloves, minced

  • 1 tbsp mexican spice blend

  • 1 can fire roasted diced tomatoes

  • 1/2 cup shredded mozzarella

  • 1 lime, cut in fourths

Instructions:

  1. Heat drizzle of oil in pan and add onion and poblano pepper. Cook 7-8 min

  2. Add turkey to pan and cook through

  3. Add salt, pepper, chipotle powder

  4. Remove from heat

  5. Spread thin layer of cream cheese on one side of tortillas

  6. In another small pot, add garlic, olive oil and mexican spice blend, stir for 1 minute

  7. Stir in crushed tomatoes and cilantro. Season with salt and pepper

  8. On cream cheese side of tortillas, add ground turkey then roll them up and place in baking dish

  9. Top with tomato sauce and sprinkle mozzarella on top

  10. Place in 500° F broiler for 3-4 min or until cheese melts

  11. Serve with lime wedges

I have used ground turkey, ground beef, and ground chicken for this dish and all are amazing! Also, use more chipotle powder if you want more heat!!
